Cauliflower Pizza Crust Recipe

Why Cauliflower?

Cauliflower pizza crust is a great alternative to pizza dough for those looking to try something new, low carb, or a little healthier. Not only that, but this pizza crust is naturally gluten-free making it a great option for those who are looking for gluten-free dough recipes. Made up of mostly cauliflower and held together with the binding agents of cheese and egg this pizza crust compliments most pizza toppings very nicely.

Cauliflower Pizza Crust

Admittedly, it does taste a lot like its main ingredients, cauliflower and egg. While this is not necessarily a bad thing, those that are trying to satisfy a real pizza craving may want to add the Pizzacraft® herb blend to their recipe to try and mimic pizza dough flavors a little more. Additionally, it does take longer to cook than a regular pizza because it is not really a dough substance, it is a baked crust and it is important that the bottom browns to keep the crust together.

How To Make Cauliflower Pizza Crust

Ingredients

1 head cauliflower (white, purple, green, or yellow!)

1/2 cup low moisture shredded mozzarella

1/4 cup grated Parmesan

1/2 teaspoon dried oregano

1/2 teaspoon kosher salt

1/4 teaspoon garlic powder

1/2 teaspoon Pizzacraft® seasoning herb blend

2 eggs, lightly beaten

Directions

1. Preheat the Pizzeria Pronto® oven or conventional oven with baking stone to 500º F.

2. Remove the stem from the cauliflower stalk. Break the cauliflower into florets and pulse in a food processor until fine. Steam in a steamer basket for a few minutes. Let cool.

3. Place the steamed the cauliflower on a clean dish towel and ring out as much water as you can. Repeat several times.

Cauliflower pizza dough

4. In a large bowl, thoroughly combine cauliflower, mozzarella, parmesan, oregano, salt, garlic powder, Pizzacraft® herb blend, and eggs.

5. Spread into 1/4 inch thick circle on a baking sheet or parchment paper. Carefully move the crust to a pizza stone or the pizza oven and bake for 15 minutes.

Gluten free pizza dough

6. Remove the pizza, add desired toppings and bake an additional 10 minutes until the bottom of the crust begins to brown.

Tips:

The trickiest part of this process is not ripping the crust as you transfer it to the oven. In its uncooked state, the cauliflower wants to crumble. If possible, make the pizza on parchment paper while on metal pizza peel so that the transition to the oven is easy. Once the crust is fully cooked it holds together a little better.

Greek Yogurt Pizza Dough Recipe

Two Ingredient Pizza Dough

I was looking around this week for new pizza recipes when I stumbled upon something super interesting: a recipe claiming you could make pizza dough in 10 minutes with just two ingredients! While that shocked me, I was even more surprised when the recipe said the main ingredient was Greek Yogurt! Naturally, this was something I needed to try.

greek yogurt pizza dough

To get the full effect of the Greek yogurt dough I decided to test three different brands of plain Greek yogurt. The way the recipe essentially works is the yogurt is mixed with self-rising flour. When the flour is combined with the somewhat acidic Greek yogurt the mixture becomes very similar to pizza dough. The dough retains a fair amount of yogurt taste and is less elastic than regular dough. Even still, the recipe is extremely fast and the Greek yogurt adds a ton of protein to your pizza, making it a fun and worthwhile recipe to try out!

Here is our take on the best Greek yogurt to try this recipe with.

Two Ingredient Pizza Dough Recipe

1 1/2 cups self-rising flour (can easily be made by combining 1 cup of all-purpose flour with 1 1/2 teaspoons of baking powder and 1/2 teaspoon of salt)

1 Cup Greek Yogurt

Instructions

Combine Ingredients in a bowl and begin to mix with a spoon or spatula.Once the mixture begins to combine, knead the dough on a floured surface for 7 minutes.Add flour as needed while mixing as the dough can be sticky and moist. When dough is fully kneaded cut the dough ball in half. These will get you two 10 inch pizzas.Roll each ball out to about 10 inches on a floured surface. Rolling is recommended as the dough does not stretch like traditional pizza dough.Add toppings and cook in the Pizzeria Pronto® or conventional oven on a pizza stone for around 8-10 minutes at 600 degrees F or until the dough becomes golden brown. But honestly, keep an eye out while cooking, because the dough stayed more “wet” that we like it to be, and could have been cooked longer.

The Best Greek Yogurt To Use

Yogurt 1 Clover Whole Milk 3.5%

The Clover Greek Yogurt was our favorite yogurt for this recipe. While all the yogurts produced solid dough, the higher milk fat of this yogurt added a little more flavor and color to the dough. Though it created a more soggy pizza.

yogurt dough recipe

Yogurt 2 Fage Total 2%

Similar to Clover this yogurt made dough that both tasted good and held up very well in the oven. Although the slightly less milk fat took away some flavor and color from the dough. Arguably, you may not want to taste the full spectrum of Greek yogurt while eating your pizza.

two ingredient pizza dough

Yogurt 3 Aussie Greek Yogurt 1.5%

Having the lowest milk fat this yogurt lacked the flavor that dough 1 and 2 had. While it didn’t affect the ability to make the dough at all, it just didn’t seem to have as much of a taste. Though it created a more crunchy pizza.

Results

You may never make pizza the same again after you have tried this recipe, that is if you are still willing to call this a pizza. While all the Greek yogurts worked, the pizzas we made did have a really distinctive taste. That said, they still tasted good and were all eaten. So if you are looking for a fast dough for a last minute pizza packed with protein, this is a great option!

On top of that, we only used plain yogurt for this recipe, thinking flavored yogurt might make it too complicated. After this experiment though, I think it might be fun to try some other flavors out and see what happens, maybe make a dessert pizza with some fancy honey or strawberry Greek yogurt.

5 Accessories To Take Your Pizza Party To The Next Level!

5 Accessories To Take Your Pizza Party To The Next Level!

Just about everyone has been to a bad pizza party. With greasy pizza in a box, it tastes like the box, and you’re choices are pepperoni or cheese. While this might offend those of your that are nostalgic, I think we have grown out of this Chucky Cheese pizza party.

Meanwhile, we have developed a taste for homemade pizza, but it’s still easy to get stuck in the same ruts. In order to bring some life to your pizza parties again, here are 5 of our favorite tools and accessories to switch up your pizza rotation and take your party to the next level!

Calzone Press

Calzone Press

The Calzone Press is single-handedly my favorite Pizzacraft® tool. I love this tool because it brings everyone in on the pizza making process! Almost like a taco bar, you can set up a calzone making station where each guest gets to add their own fillings to their calzone before throwing them all in the oven! The press is easy for everyone to use and makes a perfect calzone every time; once you learn to not overstuff it.

Pizza Cone Set

pizza cone set

If you want to get a little flashier than the calzone, you can make the more modern Pizza Cones. Pizza cones are essentially a pizza version of an ice cream cone. They offer the same craft-ability as a calzone with the added benefit of being an upright cone! Not only are these picture-worthy, but also pretty fun to eat.

Pizza Seasonings

pizza seasoning

Sometimes you get stuck making the same kind of pizzas, but who can blame you? You know what toppings you like! I understand that’s why if I am looking for something different I will start by changing the flavor of my dough with the three Pizzacraft® herb blends. Each blend adds a flavor profile of a specific pizza style giving a whole new dynamic to your pizza! You can add the blends into your dough, sauce, or sprinkle some on top.

Pizza Cookbook

pizza cookbook recipes

If variations on your classic pizza are not what you’re looking for, you can step outside the box with the Pizzacraft® Pizza Cookbook. The cookbook features some of our favorite unique artisan style pizza recipes that are sure to surprise your guests. Not only that, but there is an entire dessert pizza section that will have you making pizza for every meal.

Deep Dish Pan

deep dish pan

Becoming more and more popular is our Deep Dish Pan. The deep-dish can be a great way to make things a little different and even a little fancier by crafting a layered deep-dish pizza. So if you are having more of a dinner party than backyard BBQ I would try making a classic Chicago style pizza or inventing your own deep-dish creation.

Pizza Roses

How To Make Pizza Roses

A fun way to change up your pizza night is to make a cheese stuffed pizza cone. The pizza cone is like an ice cream cone except it is made with dough and filled with your favorite toppings.

The process is a little more complicated than making a regular pizza, but the results are worth it. The Pizzacraft® Pizza Cone Set makes things easy by giving you a template to cut out your cones and holders to cook the cones upright in the oven. We used our set to make a Pinterest favorite, Pizza Roses, except ours or stuffed with cheese and pepperoni!

Pizza Roses

Start With a Pizza Cone

Steps

Pre-heat oven or grill to 400° F.Roll your pizza dough out to 1/16″ thickness and use the cutter to cut out two pizza cone shapes.

Pizza Cone
Dab edges of the dough with water and fold over to seal. Use the Pizza Cone Set dough crimper to ensure the seam is closed.

pizza cone
Lightly flour the silicone cone mold and slide dough onto the mold. Par-bake this cone upright for 6-8 minutes, or until it begins to lightly brown.Remove cone from oven or grill, let it rest for a few minutes then remove crust from the cone mold.

pizza cone recipe
Place par-baked crust into the pizza cone stand and fill with your favorite ingredients.Return stand and crust to the oven or grill and bake until golden and bubbly.Let cool before eating… if you can wait that long!

If you want to take things a little further you can add an extra step and make your Pizza Cones pop with Pizza Roses for the top!

To Make The Pizza Rose Top:

Cut a strip of dough that is about 8” long and 1.5” wide.Very lightly spread sauce over the dough.Layer pepperonis longwise across the dough, leaving a little bit of dough open at the end.Add cheese on the Botton portions of the pepperonis and then roll them longwise into a rose shape.Par-bake this rose upright in a muffin pan until it holds its shape. You can use tin foil to keep it in place while baking if your muffin tin is too big.Once both your cones and roses are par-baked, simply slide the rose into the top of your pre-stuffed cone and finish cooking! The result will be a cone overflowing with rose pedal top, which looks just as good as it tastes.

Nacho Pizza Recipe

Nacho Pizza!

This funky mashup is perfect for family game night or even watching the world cup! The Nacho Pizza is one of the more contrived pizza recipes we have ever made, yet it still tastes amazing. How could it not? The pizza dough base basically turns into a giant soft taco shell for the “deep-dish” nachos to sit inside. If you do it right, the Nacho Pizza can even be cut into slices.

Pizza Nachos Recipe

The Crucial Step

The most important part of making the Nacho Pizza is making sure the pizza dough base holds up. We used the aluminum deep dish pan and par-baked the dough in the Pizzeria Pronto® so that it would keep its shape.

Par baked Nacho Pizza

First, get the Pronto (or your conventional oven) to about 500ºF, place the prepared dough in the pan with the excess dough flopping over the sides. Press the edges into the sides of the pan to form its shape. Next, par-bake the dough for about 3-4 minutes until it just starts to firm up. Remove from oven and trim off excess dough. Now it’s safe to add the toppings and not have a soggy bottom!

Ingredients

Once your deep-dish is par-baked and ready you can add your favorite nacho toppings. For ours, we went the triple-decker dip style, layering ingredients and chips.

Nacho Pizza

Ground Beef (pre-cook)Three Blend CheeseBeans Olives Salsa Tortilla Chips – We recommend thick ones!

Avocado, sour cream, lime, and cilantro to add after cooking if desired.

Bake for 5-6 more minutes at about 500ºF to melt all the cheese without burning the chips. Top with your favorite nacho toppings.

To remove final pizza from the pan, we lifted up one side and slide a plate under to keep its shape. Eat from the pizza bowl or cut your own slice!

The Best Vegan Cheese and Meat For Pizza!

Crafting A Vegan Pizza

I will admit, at Pizzacraft® we have a lot of traditionalists. They love their classic pizza recipes and when I said we were making vegan pizza there were eyebrows raised. Even though I am not vegan myself, I have a lot of family and friends with a dairy intolerance or a lifestyle free of animal products that are snubbed when it comes to pizza. We have made concessions for gluten-free dough, so why hasn’t vegan cheese been given a chance to be MVP yet!? After all, a vegan lifestyle is becoming more and more commonplace.

Restaurant menus are offering vegan options; vegan substitutes (like flax seed for egg) are very popular, and we have noticed vegan cheese stepping up to stake its claim on pizza.

FYI: If you don’t add cheese to a veggie pizza, then you got yourself a vegan pie – but that doesn’t seem to step up to the full challenge. I wanted to experience what all the vegan cheese/meat hype was about and craft a pizza that would satisfy all parties.

The Best Vegan Cheese For Pizza

The best vegan cheese for pizza

I did some research and the most recommended vegan cheese for pizza is pretty consistently cashew nut cheese. At our local Whole Foods, I was able to find two types of cashew mozzarella. It cost about the same price per ounce as regular mozzarella cheese but does appear a little bit grey in color.

With a few more recommendations I decided we should also test a vegan meat option, so we got the Tofurky Italian sausage and made three different vegan pizzas.

Pizza One – Vegan Tomato Pizza

Vegan Pizza Recipe

Ingredients

>Cashew Nut Mozzarella Cheese Tomato Sauce Fresh Tomatoes Basil Plain Dough

Results

Personally, I was very surprised at the taste of this pizza. The cashew nut cheese didn’t melt entirely or get gooey, but the pizza tasted good. In fact, a few people wandered into the kitchen and took a blind bite with no complaints (that’s pretty promising with this picky crowd). I was also told that if you are looking for a vegan cheese that melts more you could try the brand: Sheese.

Pizza two – Vegan Sausage Pizza

Vegan Pizza Recipe

Ingredients

>
Tofurky Italian Sausage Shiitake Mushrooms Cashew Nut Mozzarella Onions Tomato Sauce

Results

This was my favorite pizza by far. It still has the vegan cheese but I was twice as impressed with this Tofurky sausage. It really gave the pizza a boost in flavor (and protein) and just like a regular pizza night I could not help but take multiple slices. As for the look and consistency of this fake sausage, I have no complaints, and that’s coming from an avid meat eater. I would highly recommend you try this recipe if you’re looking for a meat alternative.

Pizza Three – Hummus Pizza

Cheeseless Pizza

Ingredients

>Tofurky Sausage Plain Hummus Diced Tomatoes Onions Shiitake Mushrooms

Results

While we kept the vegan sausage on this pizza, we replaced the tomato sauce with hummus and made a cheeseless pizza. Using hummus seemed to be a popular vegan option so I thought it would be a good addition. While it started to stray from what a pizza taste like… it was still delicious. As one friend said, “it’s just like eating hummus with some yummy baked bread” and there is nothing bad about that.

What Every Dad Wants

There are many ways to surprise the Dad in your life this Father’s Day. Yet, we know that sometimes Dads are hard to shop for because they tend to buy the things they want as soon as they want them. Personally, my Dad makes things easy for Mom and me by circling what he wants in the hardware store ads, or even buying it for himself the week before and saying, “this is my Father’s Day gift”. If he doesn’t do that, it’s pretty easy to assume he just wants the family home for a nice dinner.

So whether or not you already have the perfect gift for dad, here is a special pizza recipe sure to make dad’s night by bringing the family together over some freshly baked pizza.

Sausage Apple Pizza Recipe

– A little gourmet twist on the basic sausage pizza by adding thin cut apple slices. The sweetness of the apple is a nice contrast to the flavors of hot sausage on this pizza. Ever had chicken apple sausage? Well here is the pizza version.

Ingredients:

Uncooked Hot Italian Sausage
Fuji Apple Slices
Marinara Sauce
Shredded mozzarella
Pepper Flakes

sausage apple pizza

Instructions

1. Slice apple in half and then into thin wedges
2. Prep dough and add marinara sauce
3. Add a thin layer of shredded mozzarella
4. Place apple slices in a circle on the pizza (yes, they get cooked too)
5. Pull sausage and place sausage bits around the pizza. Make sure they are not too big of pieces or they will not cook evenly with the dough.
6. We cooked this pizza on the grill to add a bit of smoke flavor. To do so you can use a pizza stone safe for the grill, or the PizzaQue® Pizza Baking Kit for Kettle or Gas Grills.

Cheese Stuffed Garlic Knots!

Knot Your Average Love Story

I love garlic knots. I love them with a passion; I might even love them more than pizza. Hi! I’m Liana, your guest blogger this week.

When I was in high school I worked at a small pizza restaurant and they made the best garlic cheesy bread I have ever had. When I reminisce about the old days, I get hungry and make these garlic knots. They are cheesy, gooey, garlicky, and addictive!

Warning! If you don’t like garlic stop reading now. This is not a recipe for you.

garlic knot pizza

How To Make Double Garlic Knots

Makes 8 knots

½ cup Olive Oil

¼ cup Grated Parmesan*

4 (or more!) cloves of garlic finely chopped

2 tablespoons garlic powder

1 tablespoon Italian Seasoning or dried Parsley

1 teaspoon salt

Provolone Cheese

8oz of prepared pizza dough

Instructions:

*Here is one of the few times I will recommend not using freshly grated cheese. This recipe prefers the store bought type that’s almost powder-like.

1. Preheat oven to 350ºF. We used our own Pizzeria Pronto® Outdoor Pizza Oven. Mix all ingredients together. Consistency should be approaching a paste but still runny. Add more Parmesan if needed. Ingredients will settle, so stir the mix well before application. Set aside.

2. Shape proofed pizza dough into a rectangle. Cut into 8 equal 1oz strips. Don’t stretch them out too far. You want a puffy dough strip no longer than 10 inches. Tie a loose knot in the middle of the strip.

Garlic Knots Recipe

3. Stuff some provolone cheese right in the middle and make sure it isn’t falling out the bottom. Take one end of the knot and tuck it in the top. Take the other end and tuck it on the bottom. Repeat for each strip.

garlic knot recipe

4. Give your garlic mix a few stirs and then completely drench the raw knots with it. Saturate completely. I mean it. Don’t be shy. This can get messy, so I recommend using a pizza screen with something underneath to catch the dripping olive oil.

garlic Knot Pizza

5. Add more of the mix to the top of the knots because more is better. Bake on a cookie sheet or pizza stone for 8-10 minutes. Sprinkle with salt to finish.

Cooking tip: This will make or break the results! You’re looking for slightly undercooked dough. Watch them closely in the oven. The mix on the top will have just begun to brown, but the dough itself is pail and soft vs. browned and crunchy.

Garlic Knot Recipe

Show Your Crust Some Love

If you want to cook them a bit longer – then do so! But they are best when soft and gooey. There are also many ways to tie a garlic knot and they are also delicious without the cheese stuffing, so experiment and play with your food.

I love this flavor so much that I often add it to the crust of any garlic knot pizzas I’m making at home. The garlic mix is easy to whip up and I just add it to the crust before baking off my pie. It’s an extra treat at the end of a slice (unless you go crust first – don’t hate) and a nice supersize for my dinner guests. Garlic rules in my house!

Grilled Flavors For Your Pizza

Changing Up Your Pizza Toppings

Grilling season is a perfect time to change up your traditional pizza recipes for something more experimental. While we respect the classics, there are always hungry guests willing to try something new. And when you have the ability to cook a pizza in 5 minutes, even the most radical pies get eaten.

BBQ/Pizza Combo

To try something new, we partnered with our sister brand, Charcoal Companion® to pre-grill our pizza toppings before finishing off the full pie in a Pizzeria Pronto® Outdoor Pizza Oven

When you are experimenting with new toppings you need to take into account how fast they cook in comparison to your crust: Chicken, shrimp, thicker cuts of meat, and thick veggies take longer to fully cook than your dough will. To ensure safely cooked toppings (and to maximize the flavor of a food) we recommend pre-cooking some toppings before adding them to your pizza.

Shrimp Pizza

Tricks Of The Trade

To cook our BBQ style pizzas we grilled up shrimp and chicken as our toppings first. To do so we used one of our favorite Charcoal Companion® grilling accessories, the Non-Stick Mesh Grill Bags. The grill bags are non-stick mesh, and work perfectly to grill small things like chopped veggies or shrimp. The bags are heat safe up to 600°F, dishwasher safe, and reusable. Just fill the bag with your favorite toppings and throw them right on the grill. They make turning your food easy, and when our toppings were just about done we simply poured them out on our pizza to finish cooking with the rest of the pie.

Grill bags

To cook chicken for a BBQ chicken pizza we used the Charcoal Companion® Flex Grill Sheets™. Just like the Mesh Grill Bags, the flexible sheets can be placed directly on the grill to cook smaller toppings without having them fall through the grates. Not only that, but the sheets help food retain their moisture when grilling. Food like steak, chicken, and vegetables that can easily become dry when cooked directly on the grates.

flex grill sheets for bbq

From The BBQ To The Oven

Once all of our grilled toppings were done we placed them on the uncooked pizza to be finished off in one of our Pizzacraft® Pizza Ovens. We chose to finish the pizzas in the Pronto, but they could also have the full grill experience and be finished on the barbecue with the PizzaQue® Kit for Gas Grills

Outdoor Pizza Oven

The pizza came out amazing and with the help of the grill, we did not have to battle the various cooking times of thicker toppings vs. the fast cooking dough. This made for a perfectly cooked crust and juicy toppings to make an amazing grilled pizza combination.

Pizzeria Pronto® Stovetop Pizza Oven

New Way Of Making Pizza

We went through the same thing most pizza makers experience, the home oven just doesn’t cut it. It takes so long to pre-heat and the temperature zones are all over the place, resulting in inconsistent pizzas. Two hours into cooking and you might have one decent pie.

In an effort to save time and make better homemade pizza, we came out with the Pizzeria Pronto® line. Two ovens to change the way homemade pizza is made. One for indoor and one for outdoor use. Using two high-heat retaining, ThermaBond® pizza stones, and heat reflecting walls, the Pizzeria Pronto® ovens are able to cook pizza like a classic brick oven; eliminating hot spots, cutting cooking time in half, and giving consistent results for every pizza.

Home Pizza Oven

With the Pizzeria Pronto® Stovetop Pizza Oven, your conventional oven is no longer needed. You simply place the compact pizza oven on top of any gas range and turn on the burner. The oven preheats in only 15 minutes to temperatures exceeding a conventional oven, making for an optimal pizza-baking environment. Plus the oven will cook your pizzas in half the time with extreme consistency.

How It Works

indoor pizza oven

ThePizzeria Pronto® Stovetop Pizza Oven was made with a heat-efficient design, it traps and reflects heat to harness the power of your gas range, creating an optimal cooking environment up to 600°F.Dual cordierite stones in the base of the oven absorb the direct heat from the flame and redistribute it evenly, eliminating hot spots.A built-in thermometer lets you know when it’s time to cook, and the moisture vent on the top prevents your pizza from becoming soggy.

Homemade pizza cooking time

Do you have the right kind of stovetop?

•Your stovetop needs to have gas burners. The Stovetop Oven will not work with an electric range or induction burner.

The burners should have an output of about 9500 – 15000 BTUs (see chart in the manual for how outputs affect cooking times).

The Stovetop Oven should fit directly over one of your burners without covering or coming too close to materials that could be damaged by high heat (plastic knobs, countertops made with heat-sensitive materials, other appliances, etc.). For example, built-in ranges that feature knobs on the top next to the burners (as opposed to on the front side of a free-standing oven/range) might not be usable with the Stovetop Oven.
